Mediterranean tuna salad with orzo

Orzo pasta makes a really healthy salad. Let’s not forget that pasta is a complex carbohydrate that provides our bodies with a slow-release of energy. With the addition of tuna, this Mediterranean salad provides a great tasty and balanced meal.

INGREDIENTS for 4 people

  • 400 grams Orzo
  • 300 grams sweet cherry tomatoes
  • 180 grams of tuna fillet in extra virgin olive oil
  • 80 grams pitted green olives
  • Sweetcorn to taste
  • Fresh basil leaves to taste
  • Extra virgin olive oil to taste

PREPARATION

  1. Cook the orzo in lightly salted water to al dente.
  2. Quickly drain and cool the pasta under cold running water to stop it over cooking.
  3. Add a small amount of extra virgin olive oil to the pasta then place it in the fridge.
  4. Wash the tomatoes and cut them into quarters.
  5. In a bowl add the basil leaves and sweetcorn.
  6. Drain the tuna and add it to the rest of the ingredients.
  7. Slice the olives into small rings and add to the rest of the ingredients.
  8. Now add the pasta, mix well, cover and place it back in the fridge for up to 2 hours.
  9. Garnish with a good quality extra virgin olive oil and serve.
