Mediterranean tuna salad with orzo
Orzo pasta makes a really healthy salad. Let’s not forget that pasta is a complex carbohydrate that provides our bodies with a slow-release of energy. With the addition of tuna, this Mediterranean salad provides a great tasty and balanced meal.
INGREDIENTS for 4 people
- 400 grams Orzo
- 300 grams sweet cherry tomatoes
- 180 grams of tuna fillet in extra virgin olive oil
- 80 grams pitted green olives
- Sweetcorn to taste
- Fresh basil leaves to taste
- Extra virgin olive oil to taste
PREPARATION
- Cook the orzo in lightly salted water to al dente.
- Quickly drain and cool the pasta under cold running water to stop it over cooking.
- Add a small amount of extra virgin olive oil to the pasta then place it in the fridge.
- Wash the tomatoes and cut them into quarters.
- In a bowl add the basil leaves and sweetcorn.
- Drain the tuna and add it to the rest of the ingredients.
- Slice the olives into small rings and add to the rest of the ingredients.
- Now add the pasta, mix well, cover and place it back in the fridge for up to 2 hours.
- Garnish with a good quality extra virgin olive oil and serve.
