How to grill cuttlefish or squid. Grilled fish is readily available in restaurants all over Italy and this particular specimen was served on a plate at Enzo’s favourite restaurant in Rome.

We recommend that when in Rome, you get off of the beaten track of everyday Italian restaurants which can prove to be quite expensive, in favour of exploring those tucked away in tiny streets or as in this case, wrapped around a street corner.  L’Angoletto Romano is a very cozy, welcoming restaurant full of things to look at!

Once you have sampled this dish (which may be seasonal at the restaurant), you will most definitely feel inspired to have a go at making this inexpensive and very simple dish yourselves.

How to grill cuttlefish or squid: Serves 4

  • 2 medium cuttlefish (or squid), cleaned and butterflied
  • 1 tablespoon olive oil
  • 1 large clove garlic, finely chopped
  • salt and pepper

  1. Chop off the tentacles and butterfly the cuttlefish.
  2. Divide each set of tentacles into 2.
  3. Season the cuttlefish with the garlic, salt and pepper and a good slug of oil.
  4. Heat a grill pan to its hottest temperature.
  5. Grill cut side up for about 2 minutes.
  6. Turn and grill for a further 2 minutes.
  7. Turn once more and grill for a final minute.
  8. Serve simply with a salad on the side.
