Quick chili and orange dipping sauce

This quick chili and orange dipping sauce can be adapted to suit your own taste. Add more chili, garlic or use a chunky marmalade for added texture.
This sauce is not just for dipping, you can also use it to marinate fish or meat. It is delicious spread over a rack of ribs instead of using barbeque sauce.
Ingredients – 1 1/3 cup
- 1 x 12 oz jar smooth orange marmalade
- 1 – 2 red chilli pepper, finely chopped
- 1 small clove garlic, finely chopped
- 1/4 cup rum

Preparation
- In a small saucepan, bring all of the ingredients to a gentle boil.
- Reduce the heat and simmer for 5 minutes, uncovered.
- Serve hot or chilled.
