Red cabbage, carrot and jicama coleslaw
Our red cabbage, carrot and jicama coleslaw is not only colorful but very tasty and refreshing on a hot summer day.
This is the perfect picnic dish and a recipe that you will want to share with friends and family. It is very easy to put together and can be stored in the fridge for a couple of days. Should you need to store it at all, we find it is best to store it in jars in fridge. This way everyone who goes to the fridge can see it and it will get used up quickly.
You can serve this coleslaw with absolutely everything!
Ingredients: Serves 4

1 cup carrot, grated
- 1 cup red cabbage, grated
- 1/2 cup jicama, grated
- 3 tablespoons balsamic vinegar
- 1 tablespoon fresh mint
- 1 tablespoon extra virgin olive oil
- 1 tablespoon raw honey
- Salt to your own taste
Preparation
- In a large bowl, combine and stir all the ingredients.
- Cover and chill until ready to serve.
