Spanish Tuna and potato soup Marmitako

Marmitako is a typical Basque dish that is one of our favorites. The name ‘Marmitako’ in Basque means “from the pot.” A delicious stew made primarily from tuna and potatoes.

The marmitako originates from the coastal region of the Basque Country of Spain. Here, the fishermen in search of tuna, usually prepare this nutritious fish dish, on board their boats.

This is an exquisitely simple dish and well worth cooking up. It will rank among your favorite recipes.

INGREDIENTS for 4

  • 500 grams fresh bonito tuna fish (white albacore tuna)
  • 1 small to medium onion
  • 4 mature tomatoes
  • 1 green pimientos or Jalapeño
  • 4 large potatoes
  • 1 tablespoon freshly chopped parsley
  • 1 clove garlic
  • Extra virgin olive oil
  • Smoked paprika

PREPARATION

  1. Peel and cut the potatoes into cubes
  2. Finely chop the onion, tomatoes and green pepper (remove seeds and discard).
  3. Loosely cut the tuna in to large bite-size pieces.
  4. In a large saucepan, add some extra virgin olive oil and sauté the onion over a medium to low heat until golden browned all over.
  5. Add the pimiento (or Jalapeño) and stir to incorporate all the flavors.
  6. Add the potatoes and enough fish broth to help cook the potatoes. Cook over a medium to low heat, stirring occasionally until the potatoes are cooked through.
  7. Place the tuna into the mix, season with salt and stir to cook briefly to keep it juicy. Do not cook too quickly, this will keep the fish tender.
  8. Add the parsley and stir it in. Check the seasoning and add salt and smoked paprika if necessary.
  9. Take off the heat and cover. Marmitako is best served freshly made.
  10. Serve hot with some chunky, crusty bread.
