Smoked salmon and chive savory cake

  • 225 grams (9 oz/1 cup) Cake Flour
  • 1 level teaspoon mixed salt and ground white pepper
  • 3 medium eggs
  • 150 grams (6 oz/ 3/4 cup) butter, soften – at room temperature
  • zest and juice of 1 medium lemon
  • 6 stems fresh dill, finely chopped
  • 3 oz smoked smoked, cut into thin strips
  • 25 grams (1 oz) cornflour (cornstarch)
  • 1 pinched grated/ground nutmeg

  1. Preheat the oven in 180°C/360F/Gas 6).
  2. Break eggs in a salad bowl and whip them.
  3. Sieve the flour and cornflour into the butter, salt, pepper, dill and nutmeg and mix to a paste.
  4. Add the salmon, with the zest and juice of the lemon.
  5. Coat a 1 lb loaf tin with some butter and a dusting of flour.
  6. Pour the paste into the mold and place in the centre of the oven.
  7. When the cake has a nice golden colour, lower the temperature of the oven in 170°C/335F/Gas 5.
  8. Continue cooking until you can run a toothpick through it and it comes out clean.
