Oven roasting chestnuts
Oven roasting chestnuts is a really simple method of preparing them during the winter months, they make a wonderful snack with gatherings of friends and family. When chestnuts are cooked, they are soft and delicately sweet.
During the winter months in Italy, you can find chestnuts available all over the place. They are a very popular street food at Christmas time where you can find them being over an open grill.
Ingredients: Serves 8 – 10

1 – 2 pounds whole chestnuts in shells
- Make a large X in each chestnut, cutting through the shell.
- Place the chestnuts in a large bowl and cover with cold water.
- Let them soak for 10 minutes, then drain.
- Meanwhile, preheat the oven to 395F / 200F.
- Spread the chestnuts on a baking sheet and roast for 15 – 25 minutes, stirring occasionally until the skins have opened and the nuts are tender.
- Alternatively, heat a large dry, cast iron skillet over a medium to low heat until hot.
- Add the chestnuts, cover and cook, stirring every few minutes until the skins open and the nuts are tender – 10 – 20 minutes.
- Serve hot.
