6 great recipes with bok choy: It’s February and at The Farm at Rockledge Gardens, the goodies are bursting to get off of plants and onto your table. One of those goodies is bok choy. Isn’t she pretty!
We give you 6 great recipes with Bok Choy because Bok Choy was introduced to Europe in the 1800’s and is now readily available all over North America. It is a little Chinese cabbage also referred to as pak choi or white cabbage, is popular in Chinese, Philippine, Korean and Thai cooking.
Bok choy has a light and sweetly delicate flavour and is packed with good stuff like calcium, vitamin A and C as well as being low in calories. So take a walk with us through our ‘current’ choice of 6 recipes with bok choy. We say ‘current’ because we are working on a few of our own and will be adding some that have been created fresh at The Farm!
1. Seared Bok Choy with Bacon Vinaigrette
Mark Bittman tells us that this is “an unusual side dish that’s lovely with a nice piece of salmon or other full-flavored fatty fish. You can grill the bok choy instead of searing it if you like.
Other vegetables you can use: bok choy, Napa cabbage (cut lengthwise into long spears), endive (halved lengthwise), or radicchio (quartered)”.
2. Bok Chow Green Juice
We haven’t tried this yet but according to Sonnet, ‘this juice is simple. Uber simple. It’s got a slightly tart-sweet-bitter goodness that tastes clean and refreshing’.
